The Breakdown

Cut Breakdown:

14-17% High-end Steaks: These may include New York Strip, Ribeye, T-Bone, Filet/Tenderloin

7-8% Utility Steaks: These may include Sirloin Tip (often as fajita strips), Flank, Skirt, Flap (Bavette), Hanger, Rib Cap, or Round.

28-32% Roasts, Ribs, etc.: These may include Chuck Roast, Rump Roast, Tri-tip, Short Ribs, Brisket, Stew Meat, or Soup Bones.

48-51% ground beef: Packaged in convenient 1 lb. packages.

This selection offers a variety of cuts for all your meals, from high-end steaks for special occasions to everyday ground beef for tacos, burgers, and more. The exact percentages may vary slightly depending on the size of the animal and your custom preferences.

When working with the processor, you have the flexibility to customize your cuts and packaging to suit your needs, whether that’s adding more ground beef, adjusting steak thickness, or requesting special cuts. Keep in mind that processing fees are not included in the price of the beef. The locker will charge separately for their services, including cutting, wrapping, and any special requests.

A Whole Beef will typically require about 15 cubic feet of freezer space.

A Half Beef will typically require about 8 cubic feet of freezer space
